French Raspberry Pie Recipe
This is my mother's recipe and it's our family's absolute favorite dessert! The pie shell I make for this pie is 'butter deluxe flaky pie crust' from The Joy of Cooking. Any flaky pie crust will work, homemade or not. This is a really fun recipe and the pie is beautiful and delicious!
Ingredients:
- 2 cups milk
- vanilla bean
- 1/3 cup flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 4 egg yolks
- 1 whole egg
- 1/4 cup whipped cream
- 1 pint raspberries
- pie shell
- red currant jelly
Directions:
- Scald the milk with the vanilla bean.
- Add flour, sugar and salt, stirring constantly.
- Beat together egg yolks and whole egg. Add to sauce.
- When custard thickens, remove from heat and strain. Let cool. Fold in the whipped cream.
- Pour the custard into the pie shell and add the raspberries on top.
- Heat the red currant jelly on the stove over low heat and pour over the berries and custard.
