French Raspberry Pie Recipe

This is my mother's recipe and it's our family's absolute favorite dessert! The pie shell I make for this pie is 'butter deluxe flaky pie crust' from The Joy of Cooking. Any flaky pie crust will work, homemade or not.  This is a really fun recipe and the pie is beautiful and delicious! 

Ingredients:

  • 2 cups milk
  • vanilla bean
  • 1/3 cup flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 1 whole egg
  • 1/4 cup whipped cream
  • 1 pint raspberries
  • pie shell
  • red currant jelly

Directions:

  1. Scald the milk with the vanilla bean.
  2. Add flour, sugar and salt, stirring constantly.
  3. Beat together egg yolks and whole egg.  Add to sauce.
  4. When custard thickens, remove from heat and strain.  Let cool.  Fold in the whipped cream.
  5. Pour the custard into the pie shell and add the raspberries on top.
  6. Heat the red currant jelly on the stove over low heat and pour over the berries and custard.
